Vanilla Coconut Pine Lime Sorbet


Well the weather's finally starting to warm up. I'm so ready for spring, summer and SORBET! This is just a quick post to try out my new laptop (yay!) and share my new favourite flavour of sorbet. It's so refreshing, a perfect intro to the warmer weather.

These flavours were inspired by what's been in my vege box lately. Creamy and tropical, this is a great one for those of us who need a dairy free replacement for ice cream... you'd swear it has cream in it! I'm so addicted to coconut cream ice-creams. I hope you like it too. :)

Note: You will need to freeze the pineapple pieces and the coconut cream ahead of time!

1. Grind vanilla, rapadura & lime zest on speed 9 for 30 seconds, or until finely ground:
- 80g Rapadura (or to taste)
- 1 vanilla bean, snipped in a few pieces
- Zest of 2 limes
(If you don't have a vanilla bean, just use a teaspoon of vanilla bean paste or vanilla extract in the last step.) 

2. Add the ice cubes and grind on speed 9 for 10 seconds:
- 350g ice cubes

3. Add the frozen coconut cream and grind on speed 9 for 10 seconds:
- 450g coconut cream, frozen in ice cube trays (either tinned, or make your own from fresh or dried coconut)

4. Add frozen pineapple pieces, the two whole 2 limes (without skin), and the egg white. Process on speed 9 until creamy, pushing mixture down with spatula as needed.
- 2 limes, skin removed
- 300g frozen pineapple pieces
- 1 egg white (optional)

Yummo! I just made strawberry kiwi fruit and coconut sorbert tonight. Butthis will bethenext one i make.i have leftover coconut cream in the ice block tray already.

Hey -- another great recipe using coconut butter! (btw: thanks for linking to my blog :) I love limes so will have to try this. Since getting Thermomix I find that I am ALWAYS zesting every citrus fruit I use. Even if the recipe calls for "juice of one lemon" for example, I'll zest it first and toss the zest into a "zest baggie" that I keep in the freezer. The frozen zest comes in so handy for adding extra zing to sorbets and other recipes too.

Hi Jo, Sorry for asking the obvious, but was wondering if this would work with your coconut butter frozen or should I just use coconut cream from a tin. I wondered if the coconut butter would add a more creamy texture like an icecream if I left out the ice and everything else was frozen.

Hi Sharon, actually, I haven't tried coconut butter - I think it would be a bit hard to chop up. I would stick with the coconut cream - it really is creamy as it is but feel free to use all coconut cream and no ice if you like!

If you want to see a demo let me know. There's no obligation to buy - it's not like a Tupperware party - just a cooking demonstration where the consultant makes 6 dishes: sorbet, bread, dip, salad, risotto or pasta and custard. Yum! :)

Cheers for this recipe, Jo. I absolutely adore coconut cream and the idea of slurping it down in a frozen dreamy concoction such as this sends my head spinning - for the nearest tin opener! I'll be sure to check out Helene's Thermomix kitchen store (http://www.superkitchenmachine.com/shop-thermomix/thermomix-kitchen-store) for ice cube trays to freeze it. Cheers!

Hi Jo, just wondering if it still works with no egg white? I have a friend who's allergic to eggs, but just found out her daughter is allergic to dairy. (sending her over to your blog!! :-). )

I was thinking it would be a good idea to try young coconut flesh, frozen - is that what you mean? I think that would work!!
